This week marks the centenary of Bodegas Toro Albalá. Located in Montilla-Moriles, its beginnings go back to 1844, when the family founded a small winery in an old mill. At that time, the wine was made in a rudimentary way and was marketed in the family tavern.
In 1922, after several generations, José María Toro Albalá acquired and restored the town’s old power plant with the idea of moving the winery there and storing wines so that they would age for years. With the generational change in the sixties, Antonio Sánchez gave it an important boost in search of differentiation and expressing its own personality, betting on the vintage system and achieving unmistakable wines.
The Don PX are the specialty of the house, their harvest is a velvety sweet, made with Pedro Ximénez grapes picked in mid-August and laid out in the sun for about seven days until they are raisined, to concentrate all their sugars.
After pressing, a sweet must is obtained and left to rest for more than a year in stainless steel tanks. The balance is extraordinary in this long and complex wine, created to be enjoyed slowly, discovering new nuances with each sip.
