In this second vintage, Bodegas NOC confirms that it is possible to make a high-quality sparkling wine in La Mancha, using the traditional method and one hundred percent Tempranillo. A bet that sounds risky on paper, but that works in the bottle.

Despite being in one of the warmest autonomous communities in the country, the Bodegas NOC vineyards rise up to a thousand meters of altitude and are located in the Montes de Toledo, an area that benefits from a more humid climate than the neighboring regions, as well as a higher rainfall. Undoubtedly, these factors are key when it comes to making this unique sparkling wine. NOC Brut Rosé 2019 comes from an early harvest, seeking to reinforce the acidity of the base wine and enhance the varietal character of the Tempranillo.

When carried out by the traditional method, a first fermentation takes place in a stainless steel tank and a second in the bottle, which is followed by aging on the lees for more than a year.

This is how it develops the bakery notes and its creaminess on the palate, at the same time as a subtle and well-integrated bubble, which complement the fruity aromas, mainly red fruits.
