What does the future bring us? A new kitchen, a different diet perhaps? Even before us, many sought salvation in it – and were wrong. Marie and Josef Schmall, for example, called their cookbook, which was published in Vienna in 1900, “The Kitchen of the Future – Last Lifeline to Prevent the Complete Degeneration of Mankind”. Of course it was a vegan cookbook (a gem in my collection), and of course the Schmalls weren’t alone in trying to change the world in the midst of the fin de siècle.
