Shortly before 10 a.m., master baker Oliver Schieke takes the last loaf out of the oven. “Three quarters baked,” he says, grabs a kind of shovel and moves the loaves of bread from the man-sized oven onto a trolley. “The next morning they are baked. Then they go to a retirement home,” says the 45-year-old.
