When I’m homesick in Hamburg, there is one place that can calm this quiet pain: the restaurant “Zum Spaetzle”. Here, for example, there are cheese spaetzle that taste just like my grandmother from the Allgäu. The restaurateur Elisabeth Wehrle, herself from the Allgäu, created a Swabian snack bar in the north, which became a place of homecoming for me. Their apple cakes are just as good. They are dipped in a thick batter and then fried while floating in hot fat. The cakes are given a modern twist with caramelized turmeric almonds, chocolate and mint.
