The food intolerances in my circle of friends are increasing: there is a couple for whom I can cook or bake almost nothing. She does not tolerate gluten and cow’s milk products are not suitable for her. He can’t eat peanuts, apples, mustard, strawberries. His body would immediately have an allergic reaction: with shortness of breath and stomach problems.
But I don’t want to leave them hungry when they come to visit. So I developed a cake for them that takes all intolerances into account. Works just as well with cow’s milk products for non-allergy sufferers – and tastes like a raspberry dream in both versions.
