The clouds of smoke can be seen from afar, and their intoxicating scent penetrates the fog: roasted chestnuts are as much a part of the Christmas season as the mulled wine that is served one stall away. Chestnuts, the fruits of the chestnut, are much more delicious, gluten-free and can be used in a variety of ways. They originally come from the Mediterranean region, where they are not only roasted and eaten by hand, but also processed into flour that can be used for pasta, gnocchi, bread and polenta.

In winter, chestnuts are an excellent ingredient for a warming soup. With a pinch of cinnamon, caramelized hazelnuts and delicate rose petals, you can bring the holiday spirit into your bowl.
