For me, Yotam Ottolenghi is the most important chef of our time. Thinking about him is like smelling sumac and cilantro, tasting harissa and tahini. With him, vegetables become a feast for all the senses. His dishes work like culinary dopamine, they are a messenger of happiness. The Brit, born in Jerusalem, not only changed the way we eat, but also inspired a generation of chefs. Its influence on the modern kitchen will be felt for a long time.

How did he do it?

Mainly because of his openness to new flavors and combinations. Ottolenghi taught us that you can create extraordinary dishes from relatively simple ingredients.
