Coarsely mashed carrots and potatoes can be found in the US as “potato and carrot mash”, in the Netherlands as “hutspot” cooked with onions. Sometimes fancy with butter, saffron, lemon zest and crème fraîche – or hearty with bacon, sausage or sauce. Prepared low in fat, the combination of potatoes and carrots offers a mild, stomach-friendly and nutritious diet.
