On average, Germans eat 58 kilos of bread per year, more than a loaf every week, 3.5 slices per day. For us, bread is a staple food and an indispensable part of the table and plate. But for some people, Stephan Martin, diabetologist and nutrition expert, would prefer to remove sandwiches from their diet entirely. Those who are overweight or have type 2 diabetes, also known as adult-onset or obesity-related diabetes. For them, too many carbohydrates are simply unhealthy – and about half of normal bread consists of them.
