Veal scallops, pineapple chutney, barbecue bacon and Flor de Guía cheese. The latest recipe from Dabiz Muñoz, recognized as the best chef in the world and three Michelin stars, has gone viral in just 24 hours thanks to one of his ingredients, a Gran Canarian cheese.

The chef explains on his social networks that these “scallops of veal, bacon, barbecue and dripping flower cheese …” are born from his visit a few weeks ago I visited Gran Canaria, where “I was blown away with some of their products, what a wonderful place , its people and gastronomy in unstoppable ascent».

It is the flor de Guía made by El Cortijo de Caideros, which the Diverxo chef defines as follows: “What fucking madness, the flor de Guía cheese melting and dripping, the toasted bacon, the crunchy Japanese breadcrumbs… a bite that suits you. to turn your head”, explains the chef on his Instagram.

Flor de Guía or Queso de Guía is a cheese with Protected Designation of Origin since 2010, mainly linked to the northwest of Gran Canaria, Galdar, Moya and Santa María de Guía. This cheese is made by hand, mainly with Canarian sheep’s milk, although it can also be mixed with cow’s and goat’s milk as long as there is at least 60% sheep’s milk from the island.

It has a loose, yellowish rind and a creamy interior with a powerful and slightly bitter taste. This is the only cheese in the Canary Islands that uses a vegetable coagulant, the thistle flower, to coagulate the milk.
