A lemon roll cake sprinkled with amaretti won Thursday night’s platinum jubilee pudding competition which celebrates 70 years of Queen Elizabeth II’s reign.

The jury unanimously voted the culinary creation of Jemma Melvin, a 31-year-old advertiser, crowned “platinum pudding for the Queen’s Jubilee celebrations”.
The recipe thus joins the history of British cuisine, “in the footsteps of the ‘coronation chicken’, created for the Queen’s coronation in 1953, or the ‘Victoria sponge'”, underline the organizers of the competition, the result of which was advertised on the BBC.
Among the criteria requested: to be cut for a queen, to be perfect to be made at home and to stand the test of time.
“I have to tell my grandmother first, she was the one who taught me how to bake”, reacted the winner, “she will be so proud”.
“The idea of people recreating my cake, especially around the Jubilee, is just a total pleasure,” added Jemma Melvin, who was surprised to be congratulated by the Duchess of Cornwall Camilla, wife of Prince Charles and daughter-in-law. of the Queen.
The ingredients for success? A rolled sponge cake, topped with Saint Clement’s jelly (a jam of oranges and lemons), lemon pastry cream, amaretti (Italian cookies with almonds), mandarin coulis, whipped cream, orange peel, chocolate shavings and amaretti in parts.
“I found out the queen had lemon curd at her wedding, so I decided the cake should be based around the taste of lemon,” said its creator, who has been cooking since she was 6. .

Four days of celebrations are planned from June 2 to 5 for the jubilee of Queen Elizabeth II, who, at 96 years, including 70 of reign, holds the record for longevity for the British monarchy. She is also the longest reigning monarch (male and female) in the world.
