In 2016, restaurateur Fabio Haebel thought for the first time about how “cool” it would be if St. Pauli had a starred restaurant. And now that thought has become a reality. His restaurant “Haebel” now has a Michelin star and is the first of its kind in Hamburg’s St. Pauli district.
Haebel operates two restaurants in Hamburg, the “Haebel” and the “XO Seafoodbar”, as well as a bakery called “baegeri” which specializes in sourdough. He also has his hands in the Ghost Kitchens “Circus”. I catch the restaurateur today in the home office, too many phone calls and emails that he has to answer.
