The menu of the welcome dinner at the Royal Palace offered by the King and Queen will have hake with menier sauce, tapioca and trout roe as the main dish.
58 guests will be seated at the main table, plus Don Felipe and Doña Letizia. All NATO countries, guests from Asia, the Pacific or the EU.
Guests will enjoy a menu prepared by chef Paco Roncero, who has two Michelin stars to his credit, which will begin with a cocktail-style aperitif.
It will consist of twelve dishes that will be the following:
-Spherical olive.
-Red tuna brioche with old mustard.
-Corvina ceviche with tiger milk.
-Picanha air bag.
-Lobster with oil soup and pink grapefruit.
-Shrimp omelette.
-Marinated sardine with romescu sauce.
-Glazed beef taco.
-Smoked Salmon Gilda.
-Garlic prawn croquette.
-Kikos with guacamole.
-Cod fritter.
-Gazpacho with basil oil.
At the end of the cocktail, already seated, the guests will be served the main course, which will consist of hake with menier sauce, tapioca and trout roe.
For dessert, coconut foam with mint granita and passion fruit.
